Chocolate Decadence: Celebrating Chocolate Week

Chocolate Week returns for a 14th consecutive year, celebrating the world of fine chocolate from 15 to 21 October, 2018.

Chocolate Week aims to promote fine flavour chocolate, the independent artisan chocolatiers and the chocolate companies who work in direct partnership with cocoa farmers, encouraging consumers to pay a fairer price for their chocolate.

To mark the occasion, George has been busy in the kitchen, creating a chocolate pudding fit for kings and queens.

George’s Chocolate Decadence Recipe

Makes 8 rounds

  • 300g 70% dark chocolate

  • 275g caster sugar

  • 165g unsalted butter

  • 5 eggs

  • 20g ground almonds plus a little extra for ring moulds

  • Grease rings and line with parchment ensuring parchment is 1cm higher than the top of the ring

  • Melt chocolate and butter

  • Lightly whisk eggs and sugar – add ground almonds

  • Fold all together

  • Leave a few mins to thicken

  • Pour 100g of mix into each lined ring

  • Bake at 160C remove from oven whilst slightly unset in centre.

For the Autumn Berry Compote

  • 350g frozen mixed berries

  • 100g caster sugar

  • Place berries and caster sugar in a wide based pan on a low heat stirring until the sugar has dissolved.  Turn up the heat and let the mixture bubble for a few minutes
